My daughter is coming to see me on Sunday so tomorrow will be my baking day. She is gluten intolerant and shop bought gluten free cakes are always a disappointment. So tomorrow I will be baking her a coffee cake, Victoria sandwich and making a trifle with home baked trifle sponges. All the cakes are made following the age old recipe of 3 large eggs and 6 ozs each of castor sugar, baking spread and self-raising flour. To alter the flavours I add either strong coffee, cocoa or lemon. This was my mother-in-law's recipe hence the imperial measurements.
Did you know that mince pies are not a thing here in the US? It’s hard to find them, and I’ve actually introduced quite a few people to them as a result! I’m fine with that, as it means I’ve learned to make my own mincemeat (way better than store-bought), and make my own pies.
On the other hand, biscuit/cookies are massively popular, and I frequently end up trying new recipes out each year!
My personal favourites are the thumbprint cookies with a caramel filling (tastes like Twix);
